Recipe: Healthy Paleo Chocolate Chip Cookies

Ingredients:

  • 1 1/2 cups almond flour

  • 1/4 cup coconut flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/3 cup coconut oil, melted

  • 1/3 cup maple syrup or honey

  • 1 teaspoon vanilla extract

  • 1 large egg

  • 1/2 cup dark chocolate chips (dairy-free)

 

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt.

  3. Combine wet ingredients: In another bowl, whisk together the melted coconut oil, maple syrup (or honey), vanilla extract, and egg until smooth.

  4. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the dark chocolate chips.

  5. Shape the cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Flatten each cookie slightly with your fingers.

  6. Bake: Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
